Hawaiian cuisine is a representation of different cultures, different people, and different ancestors.

Japanese, Chinese, Korean, American, Hawaiian..it’s a combination/mixture of uniqueness, and that’s the beauty of it.

That’s also the beautiful part of being a human right?

With everything that’s going in our world, we have to constantly remind ourselves, we are ALL humans.

Who are we to decide who’s less than?

Who are we to decide who’s better than?

Everyone is different. Each one of us is unique. We have different skin colors. We have different cultures. We have different languages. We have different food. We have different bodies. We have different personalities. But most importantly, we are all humans.

I hope that one day, we can all celebrate our differences and discover more similarities. Not just with race and ethnicity, but also with mental illness, we are far more similar than we are different. Like Buddha says, fundamentally, we’re all born free and equal. So, let’s try to make that into our truth. Thankfully, human brains are wonderful. We can change our perspectives, even our implicit attitudes. Practice is the key: our conscious effort.

I’m sorry to go into a little rant, but I’m just in the FEELS this morning, and I also thought it’s important to have a conversation about this!

Hawaiian Chow Mein

Ingredients

  • 1 lb fresh chow mein noodles
  • 1 tbsp sesame oil (for greasing the tin)
  • some char siu pork or thinly sliced pork belly (I used bacon for this one)
  • 1 bag bean sprouts
  • 1 small onion
  • 1 medium carrot
  • 4 stalks scallions
  • 1 stalk celery (optional – I didn't use it for mine)

Sauce ingredients

  • 2 tbsp oyster sauce
  • 2 tbsp soy sauce
  • 1 tbsp sugar
  • 1 tbsp sesame oil
  • 1 tsp salt
  • a pinch black pepper

Instructions

  • Preheat the oven to 350F.
  • Line a baking pan with aluminum foil and grease it with sesame oil.
  • Boil water in a pot, add noodles, and untangle them. Once untangled, take them out and put them in cold water. Set aside. (I do this so that noodles won't break into small pieces when mixing everything together)
  • Cut a carrot and an onion into thin slices. Chop scallions.
  • In a large bowl, combine the sauce ingredients together and mix.
  • Combine noodles, vegetables, and 1/2 of chopped scallions into the bowl and mix them all together.
  • Transfer the mixture into the baking pan. Add the rest of scallions and meat (bacon) on top.
  • Cover it with aluminum foil and bake for about 15 minutes.
  • Take the cover off and bake it or broil it for about 10 minutes.
