To honor our precious Friday, I am sharing my falafel recipe!
I’ve been living in DC area for about two years now. I’ve been wanting to get infamous falafels in Georgetown, however, I never really got the chance to. Honestly, what was stopping me? I. Don’t. Know.
I could have gotten it this whole time, but I just didn’t and then…..quarantine happened.
Covid-19 rudely interrupted my plan.
Falafel Inc is now open for business, but I’m still a little bit skeptical, soooo we’ll see what happens before I….move??
Anyways, in the meanwhile, I have no choice, but to make it myself!
Falafel is such a great source of micronutrients, fiber, and protein. One falafel pita sandwich really FILLED ME UP! and tbh, my falafels were better than the ones I’ve gotten at restaurants.
If I end up getting Georgetown falafel in the next month, I’ll let you all know which one is better😋
1cupdried chickpeas/garbanzo beans(soak them in water overnight)
1yellow onion(roughly chopped)
4garlic cloves
1cupfresh parsley
1cupfresh cilantro
1small jalapeno pepper
2tspcumin
1tspcoriander
1tspsalt
2tbspflour(AP flour or chickpea flour)
1/2tspbaking soda
oil for frying(vegetable oil, canola oil, or avocado oil)
Sauce ingredients
8ozgreek yogurt(1 small cup of yogurt)
1tbspmiso
1small seedless cucumber(chopped)
1tbsplemon juice
1tspgarlic powder
1tbspground sesame
Instructions
Soak a cup of chickpeas overnight about 10 hours. (Do not use canned chickpeas. Make sure you cover the beans with lots of water.) Once peas are doubled in size, drain them.
Pour the beans into your food processor along with chopped onion, garlic cloves, parsley, cilantro, jalapeno pepper, cumin, coriander, salt, flour, and baking soda.
Pulse the ingredients together until it's somewhat rough. Scrape and mix the ingredients together occasionally and process/blend till the mixture is paste-like consistency.
Once it's all blended, put the mixture into a bowl, stir, and cover and put it into the fridge for about an hour.
Once the mixture is refrigerated, put oil into a pot or skillet and heat it up till 375F.
In the meanwhile, form the mixture into small balls. (I added some flax seeds on top.)
Once the oil is heated, fry the falafel balls for about 2-3 minutes per side until brown.
Once the falafels are fried, remove them from oil and drain.
Sauce
Chop a small cucumber to small pieces and mix all the ingredients together. (You could also add a little bit of ginger as well!)

How are you all feeling? Are you doing something good for yourself? Are you doing something good for others? According to a number of studies, acts of kindness has a great contribution to one’s own well-being/happiness.
I’m sure it’s not surprising, but I think it’s really cool that science proves it! Whether it is helping out a friend, family member, societal cause, etc., it’s so important to do something to help others. Ultimately, having those experiences with others and finding meaning in those actions can lead to better well-being for all. At least I agree with that idea. What do you guys think?
Speaking of well-being, just a little update on my life:
I started taking an online class “Science of Well-being“, hence why I’m talking about this😊 It’s only week 1, but it’s going well so far. My interest is positive psychology, so this is literally my sh*t you know? I’m just excited to learn something I truly enjoy!
My boyfriend and I are visiting Los Angeles in about a week or so. The reason why we’re visiting now is because………we may or may not be moving there soon! My boyfriend has never been there before, so he wants to see before we fully commit. I already know that I love it. It’s always been my dream to live in west coast. I mean…I’m a beach girl after all.
I’m also meeting up with my high school best friends there! We all went to the same high school in Hawaii, and we all went separate ways after graduating. Now, we might all end up being together in the same place! It’s amazing how life works sometimes. I have seen one of them about two years ago, but I haven’t seen the other girl for the longest time. I’m super stoked and cannot wait to catch up😇 It’s nice to see familiar faces and feel this nostalgia.
So, I am introducing you to this mostest nostalgic recipe EVER!
1tbspactive yeast(or one small packet of active yeast)
1tspsugar
2tbspwarm water
1/2cupmilk
1/2cupevaporated milk
1/2sugar
2tbspunsalted butter(melted)
apinchsalt
4cupsall-purpose flour
Instructions
In a small bowl, mix yeast, warm water and 1 tsp of sugar. Set it aside for 10 minutes.
In a large bowl, add eggs and, whisk.
Add milk, evaporated milk, melted butter, and yeast mixture and combine till fully incorporated.
Grease a large bowl with oil spray, transfer the mixture, and cover the bowl with a towel. Leave it for an hour and allow it to rise.
Once risen, place dough on floured surface and roll till it's about 1-inch thickness.
Cut dough into round shapes using a cookie cutter (I used a small mason jar!). Place them onto a greased cookie sheet. Cover it with a towel and allow it to rest for another hour.
Heat the oil in a sauce pan and bring to 375F. Put it on low to medium heat and place malasadas to fry until golden brown on each side. Once cooked, place them on a cooling rack or on paper towels.
In a medium bowl, put sugar and place cooked malasadas. Toss them around to evenly coat them. (I suggest you do this when malasadas are still warm.)

If you think this is just the regular fried chicken, you’re mistaken. Im not going to say it’s healthy because it’s absolutely not. But! I can promise you it’s delicious. You can’t possibly eat healthy everyday! Sometimes you need that greasy and crispy greatness haha. It’s all about that balance. You gotta honor your unhealthy cravings sometimes.
What’s so different about this fried chicken? Well, I’m glad you ask! The difference is…..how you season the chicken. Unlike American fried chicken, you’d have to season and marinate the chicken and not the flour or batter. It just becomes a symphony of UMAMI!
So, here you go!

Marinate the chicken: In a medium bowl, mix together ginger, garlic, gochujang, sake, soy sauce, and eggs, and water. Add sugar, corn starch, and mochiko into the bowl. Combine. Add the chicken, massage the marinade into them, and cover.
Refrigerate this for at least 4 hours (I left it in the fridge overnight).
Heat about 2-inches of oil in a large sauce pan until the temperature is about 325F.
In a large bowl, combine flour and garlic salt. Place chicken into the bowl and lightly dust the chicken with the flour mixture.
Deep-fry the chicken till golden-brown (about 3 minutes on each side).

On Saturday, we went on a hike. It was pretty much rock climbing really. Although it was a lot harder than I imagined, I had a lot of fun! It was such a grounding experience for me. Figuring out where I should grab, where to place my foot, where to go next…kind of like solving a puzzle. Since, I had such a stressful week last week, it was so nice to be in tune with the nature and focus on what’s in front of me. I felt so calm and refreshed.
After we went down this steep hill, there’s a river. I don’t know what it is, but whenever I see a body of water, I feel so in peace. I am such a tiny tiny part of this huge world, the universe! My problems suddenly seemed so small.
After a hike, my roommate and I grabbed Chick-fil-A on the way home cause we felt we deserved some waffle fries, ya know? (Shout out to the workers there! They were so efficient, so nice, all around positive.) Anyways, we came home and watched a couple of episodes of “Sweet Magnolias” (a new show on Netflix, and it is AMAZING!). I am so grateful for simple moments like these. I felt so warm and fuzzy inside. My cup was overfilled with water full of magic and sparkles.
On Sunday, we did a little BBQ. We had some burgers, hotdogs, and S’Mores!! We also played hide and seek. – I was able to embrace my inner child, and I think she was happy☺️ At night, the whole vibe reminded me of camp Eardman (a camp we went to every year in high school). We, seniors in high school at the time, surrounded a bonfire and stargazed. Not everyone got along so well, but in that moment, I felt the bond. I feel like a bonfire has that interesting effect on people (We’re all in this together🎶 vibe haha)
Aaaand on Monday, I went on a little picnic with friends. Amazing company, amazing banana bread (shout out to my roomie! it was so yummy😋), and amazing weather never fail to put a smile on my face. We haven’t seen each other since January, so we had so much to catch up on. We talked, talked, and talked, and completely lost track of time. I feel so blessed to have friends like them that constantly give me positive energy and make me feel so proud. I honestly cannot even put into words how grateful I am. I feel like I don’t express it enough. So, let me just say Thank you publicly❤️
